I think the date for your Israeli Shermans versus Egyptian T34/85s battle should have been the 1956 Suez Crisis rather than the 1948 - 1949 Israeli War of Independence.
It seems that the Egyptians only had Vickers VI Light Tanks in 1948 and didn't even manage to get any Shermans in time due to deliberate Italian dawdling - despite British help.
The Egyptians didn't get any T34/85s from Czechoslovakia until 1955 in the same year they got 'Archer' self-propelled 17-pounder AT guns from Britain, but the Egyptians were still mainly using Shermans in 1956 including special French conversions with the AMX-13 turret.
The fact that both Israelis and Egyptians were using mainly Shermans in 1956 led to several 'friendly fire' incidents, which inspired the adoption of the distinctive Israeli identification chevrons.

Thanks for the great comments, I hadn't thought about the availability of armour types in the Egyptian army much!

Here is the US Army publication with details of Israeli Shermans versus Egyptian Archers in 1956.
GHQ Micro Armor did a couple of free online PDF scenarios based on this study, but they messed up the maps and put the Ruada Dam and the wadis in the wrong places!
