I made posca (and a whole bunch of other edibles) with my Latin class last year - one kid loved it, the others... not so much! :lol: The fish-sauce-infused burgers were much more popular.

Isn't Roman fish sauce much more salty than the modern (Asian) Fish Sauce?

It would be more like what used to be sold as fish paste. Think heavily salted anchovies.

Apparently, there were different grades of garum ranging from something like nam pla through to anchovy paste. I went for the lighter end!

The posca we made using red wine vinegar to take the place of the spoiled red wine that seems a likely historical base, mixed with water - a bit like you'd make up fruit squash. A good site on Roman recipes is: https://pass-the-garum.blogspot.com/2013/09/posca.html
