Any thoughts on this?

We assume that jinking can be done at any time, not just when being tailed.

How does jinking work with a formation and wing men?

Yes, you can use jinking at any time and it can be good practice if there is a risk of an aircraft being bounced. It was also standard practice in real life where rookie pilots were warned never to fly straight and level for long periods.

It's an Easy manoeuvre so no pilot has to test to carry it out. Also it doesn't trigger any test by wingmen or others to stay in formation unless a pilot is wounded. See section 9.1 and 9.2 on page 21 for how it works for this and other Easy manoeuvres.
