I'd suggest you use historical TOEs, so that the PAK 36 has a crew of Junior Leader, four gunners and 1 driver or two teamsters.

There are a number of Ospreys with titles like "The German Infantryman 1941-45" etc. which have some information on the training of the troops.

Should a number of the men be with the bikes (a bit like horse holders, really)? No. If going into assault I think they'd just leave their bikes somewhere and return to get them later. Likewise an infantry platoon going to assault enemy positions is not going to leave a guard with their rucksacks. ...

As I have experience on the T-26 tank, the Ferret armored car, the BTR-60 APC and the MTLB armored gun tractor I can say that manual traverse is fairly quick if the turret is smallish and the weapon therein is of reasonable size.
