We use the 1:300 Cruel Seas vessels and a 6' x 4' table. Seems to work ok.

Yes, well done - even for anyone not interested in this fascinating period of military history, I would imagine it provides an excellent template for numerous similar campaigns elsewhere in the world.

Historically, they just didn't; remember that these tactics were in their infancy and had not yet evolved to the level they were at in WW2. However, you can still utilise the "team" definition for virtually all "heavy" and exceptional weapons - eg H/MMGs, minenwerfers/granatenwer...
